These hazelnuts are of the variety called tonda gentile romana. They are grown by the Sapori di Ieri company in the Tuscia Viterbese area, where the hazelnut is the undisputed queen of crops. The first choice, which has a caliber ranging from 13 to 15 mm, is selected, and the “spoiled” hazelnuts, that is, those that are pierced by various insects, are carefully eliminated, because no insecticides or any other kind of synthetic treatment is used on the farm.
Hazelnuts are roasted in the oven, at a low temperature, to maintain their organoleptic qualities. Excellent as snacks, to accompany aperitifs, but also to reduce them into flour for cakes or cream.
